Delicious. Creamy. Light.
I found the recipe on www.epicurious.com. It originated in Bon Appetit, November 2008. It’s a keeper. The cream cheese and pumpkin are perfectly balanced. Neither ingredient is too overwhelming. The gingersnap crust is sweet, gingery and crunchy. The marshmallow-sour cream topping is a pleasant addition to each bite.
I baked this cake for a Thanksgiving dinner I attended this weekend thrown by a special friend – Michael. Michael started a once a month get together in 1998. He named this gathering “Soul Food Sunday.” The gathering sure does feed your soul in more ways than just with food. The core group – Michael, Sheronda, Victoria, and Frank keep it going monthly. German, a friend I made when we were both attending the French Culinary Institute invited me to be part of this group in 2008. I’m lucky to have received that invitation because they are truly good people. It was great to see all of them!
Thanksgiving is Michael’s most special dinner of the year, giving thanks for the year. The dinner was delicious! I had no expectations but once I tried the food that was made for the party any expectations I could have had were met and exceeded. Sheronda baked a turkey that was very moist and tasty. She accompanied the meal with collard greens, macaroni and cheese, asparagus wrapped in bacon, sweet potato pie, cranberry stuffing, rice, black eyed peas, gravy and cornbread.
I wish I could have another plate of her food now.
My dessert was impressive too. I’ve come to be the provider of all things sweet for their gatherings. This is my honor and moment to shine on the pastry front. I created the pumpkin cheesecake with gingersnap crust and marshmallow-sour cream topping, an apple crisp from scratch and a chocolate genoise cake brushed with Chambord simple syrup, filled with chocolate ganache and raspberry jam, covered in chocolate glaze.
A fabulous evening, with fabulous friends and delicious food is what we were blessed to experience. German came up to visit from Florida where he currently resides. Dale provided everyone with his latest cocktail creation via the infamous 5 gallon orange home depot jug. New friends are made and catch up is played with the one’s you all ready know while sipping, nibbling, dancing, talking, and laughing.
